Champagne Pairing Recipes

POTATO PAVÉ WITH CAVIAR & CRÈME FRAÎCHE
Crisp, golden layers of buttery potato paired with cool crème fraîche and briny caviar create an elegant contrast. Champagne’s bright acidity and fine bubbles cut through the richness while beautifully complementing the salinity of the caviar.

INGREDIENTS
2 lbs Yukon Gold potatoes
1/2 cup heavy cream
3 tbsp unsalted butter
1 tsp kosher salt
1/4 tsp freshly ground black pepper
2 tbsp neutral oil, for crisping
1/2 cup crème fraîche
1–2 oz caviar
Fresh chives, finely chopped, for garnish
INSTRUCTIONS
Preheat oven to 350°F.
Line an 8-inch square baking dish with parchment paper overhanging.
Peel potatoes and slice very thinly with a mandoline.
Evenly coat (toss) with sliced potatoes cream, melted butter, salt and pepper.
Layer potatoes tightly in prepared dish, press each layer flat, cover with parchment and foil.
Bake 60–75 minutes, until potatoes are tender. Remove dish and cool slightly.
Place another pan over potatoes and weigh down. Refrigerate min. 4 hours.
Lift chilled pavé from pan and cut into 2-in pieces.
Heat oil in a skillet over medium-high heat.
Sear potato pieces until golden and crisp on both sides.
Plate and top each piece with crème fraîche, caviar and fresh chives. Serve warm.
PAN-SEARED SEA BASS WITH LATE-SUMMER VEGETABLES & CHAMPAGNE BEURRE BLANC
The delicate richness of sea bass and silky Champagne beurre blanc are balanced by fresh late-summer vegetables. Champagne’s acidity brightens the buttery sauce while its minerality beautifully complements the tender, flaky fish.

SERVINGS 4
INGREDIENTS
4 sea bass fillets, 6 oz each
Salt and freshly ground black pepper
2 tbsp olive oil
1 small zucchini, diced
1 small yellow squash, diced
1 cup cherry tomatoes, halved
1/2 cup fresh corn kernels
1 tbsp fresh herbs, basil or chives
CHAMPAGNE BEURRE BLANC
1 small shallot, finely minced
3/4 cup Brut Champagne
2 tbsp Champagne vinegar
1/2 cup heavy cream
8 tbsp cold unsalted butter, cubed
Salt and white pepper to taste
INSTRUCTIONS
In a small saucepan combine shallot and liquids, simmer until reduced to about 2 tbsp.
Add cream and simmer until slightly thickened.
Reduce heat to low and whisk in cold butter, one cube at a time, until smooth and silky. Season with salt and pepper. Keep warm.
Heat 1 tbsp olive oil in a sauté pan. Add zucchini, squash and corn; sauté until just tender. Add tomatoes during the final 2 minutes. Season and finish with fresh herbs.
Pat sea bass completely dry and season with salt and pepper.
Heat remaining olive oil in a skillet over med-high heat. Place fish skin-side down and cook 4–5 min until crisp and golden.
Turn and cook another 2–4 min, until fish is just opaque and flakes easily.
Spoon sauce onto each plate, top with vegetables, sea bass, and finish with fresh herbs.
